Red, White and Blueberry Salsa


I mentioned a while back how I wanted to start trying out Southern Living recipes and blogging about them. Well this is my first one! I saw this recipe in the July issue and I thought it would be PERFECT for the 4th of July.

It may sound strange, but trust me, its delicious and SO easy! I may have mentioned before how I dont like the taste of fresh tomatoes, so I especially love this recipe because it doesnt require them!

2 cups coarsely chopped blueberries
1 cup whole blueberries
1/4 cup fresh lemon juice
3 Tbsp chopped cilantro
2 seeded and minced jalapenos
1/3 cup diced red bell pepper
1/2 tsp kosher salt

Combine all of the ingredients and serve immediately or chill until ready to serve.

  1. That looks so yummy! Something my husband always loves is Peanut Butter and Jelly pie! It isn't a typical 4th of july recipe, but so good!

  2. Mmmm! That sounds awesome! & how unique...no tomatoes! :) Of course, we LOVE blueberries, so this is right up my alley. Most years we're down with my parents in Savannah, and we have Low Country Boil every 4th of July! Yummmmm.

  4. this sounds absolutely delish! have you tried the grapa salsa recipe that was in Southern Living awhile back? i never would have thought to mix fruit with peppers, but it seems to work! happy 4th!

  5. That looks very yummy and festive! I made Buffalo Chicken Dip on the 4th. It wasn't red, white and blue but it was a hit!
