Buffalo Chicken Pizza!!!



So I teased everyone yesterday with my instructions for buffalo chicken pizza. So here it goes!

I first experienced this delicious pizza combination at Mellow Mushroom. If you have one near you, then you must try it! Its fantastic. I love anything buffalo, and even though it sounds weird on pizza... just trust me. Its not!

Ingredients
1 Rotisserie Chicken
Bag of premade pizza dough - mine came from the bakery section at my grocery store
Ranch Dressing
Mozzarella Cheese - my bag had 3 cups of cheese in it.
Bleu Cheese Crumbles - as little or as much as you like
Franks Red Hot Buffalo Sauce

Instructions
Preheat oven to 400*
Separate chicken from the bones (I only used the meat, no skin) and shred apart with a fork
Place chicken in a bowl and cover in franks red hot
Spread dough onto a greased cookie sheet or pizza stone -(this part was tricky because the dough kept shrinking up. I tried my hand at tossing the dough like the real pizza chefs do... but I had no idea what I was doing and gave up.)
Spread ranch dressing evenly onto the uncooked dough. This is substituting as the sauce.
Spread a fine layer of mozzarella cheese, then add the chicken and bleu cheese crumbles
Cover with remaining mozzarella cheese.
Bake at 400* for approximately 20 minutes. Just watch your oven and when the cheese is bubbly and the crust is browned, its ready! I kinda over cooked mine, but I didnt mind!
PS the orange you are seeing is Buffalo Sauce not grease.

  3. That's one of our favorite meals too - and it's so easy that even I can make it :-) But you also just totally gave me a craving for Mellow Mushroom -- love that place!

  4. If you roll out the dough thinner than you would like, and then let it "rise" under a damp cloth for about 20 minutes before you need to use it, the dough is much more cooperative. Then you can roll it a bit more if it has shrunk up, top it, and cook. You will also find if you make pizza alot at home, that some dough will be easier to roll out than others. No idea why this is true... SOme days the dough is "good" and other days "bad". Good luck, I have made a pizza similar and also know it is too heavily topped for the dough to be too thin!
